Beef Virginia:

For the Beef Marinade:

  • 1 lbs. Grass-fed Sirloin Steak

  • 1/2 Cup Teriyaki sauce

  • 1/3 cup Worchester sauce

  • 1/4 cup soy sauce

  • 3 Tbsp. minced garlic

  • 1/2 tsp. black pepper

For the Potatoes:

  • 2 lbs. white or red potatoes

  • 4 Tbsp. butter

  • 1/2 cup Milk

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

1 head of Broccoli

For the Cheese Sauce:

  • 1/4 cup of flour

  • 4 Tbsp. Butter

  • 4 cups of Milk

  • 1 block of Shredded Cheddar Cheese

  • Salt and Pepper to taste

First off you will be using Beef Sirloin Steak, I have found that the Sirloin has great flavor for this. You will want to cut it into 1/2 - 1 inch cubes and place in a bowl. Next you will marinate it with teriyaki, soy, Worcester sauce, minced garlic and pepper. It tastes best if left to marinate up to 3 hours, however, if you’re in a rush like I typically am, you can let it marinate while preparing the vegetables. After marinating is over heat a cast iron skillet on stove over medium-low heat. I have found that the Cast Iron adds so much flavor to the dish. Add beef and marinade sauce. Cook for 20-30 minutes until beef is cooked and the marinade has thickened. Set aside until ready to assemble.

Second the Potatoes. Peel and dice potatoes, rinse, place in a pot and fill with water (about 2 inches above potatoes). Bring to a boil and let cook for 30-40 mins until fork tender. Drain. Add Butter, Milk, Salt and Pepper. Mash the potatoes until smooth.

Next the Broccoli. Cut broccoli off of long stems, place in a steamer on stove with 1 1/2 inches of water in bottom of pot. Steam for 15-20 minutes until tender but not limp.

Lastly the Cheese Sauce. Melt butter in a sauce pan over medium heat. Once the butter is melted add the flour and stir, let cook for 30 seconds. Slowly begin adding the milk, try 1/4 cup first, all while stirring consistently. Let the sauce thicken and cook in-between milk additions. Once all of the milk has been incorporated add the cheese. Stir until melted. Salt and Pepper to taste.

Finally assemble. Spread about 3/4 cup of mashed potatoes on plate. On top of the potatoes add 1/2 cup of meat with juices. Repeat with Broccoli and finally pour cheese sauce (as much as is your liking) over everything. Serve and enjoy!
